Slow Cooker Honey Mustard Chicken Thighs

Ingredients for the Chicken (serves 4)

  •     2 lbs chicken thighs (skinless, boneless)
  •     2 tbsp honey (or substitute with maple syrup)
  •     1/3 cup Dijon mustard
  •     1 tsp paprika
  •     1/2 tsp sea salt
  •     1/4 tsp black pepper


Optional Sides

  •     1 cup uncooked quinoa or brown rice (yields ~3 cups cooked)
  •     4 cups steamed green beans


Directions

  1. Combine all the chicken ingredients in a slow cooker, mixing well to coat the chicken evenly.
  2. Cook on low for 6–8 hours or on high for 4 hours. Alternatively, bake the chicken in the oven at 425°F (220°C) for 30 minutes, or until the juices run clear when pierced.
  3. Just before serving, steam the green beans until tender-crisp and cook either quinoa or brown rice according to package directions.
  4. Divide the chicken, green beans, and quinoa or rice evenly among plates and enjoy!


Nutritional breakdown (per serving with quinoa/brown rice and green beans): 30g protein, 8g fibre
