New Favourite Kale Salad Recipe!


This salad comes from the cookbook Oh She Glows and is one of my family’s favourite kale salad recipes. I’ve made it a number of times when hosting dinner parties, and each time someone has asked for the recipe. The pecan parmesan calls for nutritional yeast, which can be found in most grocery stores, Bulk Barn, and Healthy Planet. It looks like dry, yellow flakes and has a pleasant cheese-like flavour. Nutritional yeast is rich in B-vitamins, especially B12 (1/4 cup provides almost the full daily recommended intake of B12), making it a great food for vegetarians!

Pecan Parmesan:

  • 1 cup raw pecans
  • 1 clove garlic, minced
  • 1 tbsp nutritional yeast
  • 5 tbsp olive oil
  • 1/4 tsp salt

Salad & Dressing:

  • 2 large bunches kale
  • 2 cloves garlic, minced
  • 1/4 cup fresh lemon juice (from 1 extra-large lemon)
  • 1/4 cup olive oil
  • 1/2 tsp dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 tsp pure maple syrup
  • 1-2 handfuls dried cranberries or cherries
