Ingredients (serves 8):
- 1 small onion, diced
- 8 oz mushrooms, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 small zucchini, grated
- 2 lbs ground beef or turkey
- 2 eggs
- 1/4 cup flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried thyme
Directions:
- Preheat oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium-high heat. Sauté the onion, garlic, and mushrooms until lightly browned and all the water from the mushrooms has evaporated. Set aside to cool slightly.
- In a large mixing bowl, combine the ground meat, cooked vegetables, grated zucchini, eggs, flour, salt, pepper, oregano, and thyme. Mix until well combined.
- Transfer the mixture to a 9 x 13-inch glass baking dish, shaping it into a loaf.
- Bake for 60 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F/71°C for beef or 165°F/74°C for turkey).
- Let cool for a few minutes before slicing and serving.

Tip: serve with potatoes and green beans or broccoli to increase the fibre and protein content per serving!
