## Ingredients:

- 1 cup quinoa (I used ½ cup white quinoa and ½ cup red quinoa)
- 1 can black beans
- 1/2 red onion
- 1/2 cup chopped almonds, roasted
- 1/2 cup cherry tomatoes, halved
- 1 yellow pepper, diced
- 1/4 cup cilantro, chopped
- 1/3 cup fresh lemon juice
- 3 tbsp olive oil
- 2 tsp cumin
- 1 tsp salt
- 1/4 tsp honey or maple syrup

## Directions:

- Rinse quinoa with water, drain and transfer to a pot. Add 2 cups of water and bring to a boil. Reduce heat to low and simmer, covered, until the water is absorbed (about 15 minutes).
- While the quinoa cooks, drain and rinse the black beans and combine in a large bowl with the red onion, almonds, cherry tomatoes, yellow pepper and cilantro.
- In a small bowl, whisk the lemon juice, olive oil, cumin, salt and honey.
- Add quinoa and dressing to the salad and mix until well combined.
