Ingredients for the Chicken (serves 4)

-     2 lbs chicken thighs (skinless, boneless)
-     2 tbsp honey (or substitute with maple syrup)
-     1/3 cup Dijon mustard
-     1 tsp paprika
-     1/2 tsp sea salt
-     1/4 tsp black pepper

Optional Sides

-     1 cup uncooked quinoa or brown rice (yields ~3 cups cooked)
-     4 cups steamed green beans

Directions

- Combine all the chicken ingredients in a slow cooker, mixing well to coat the chicken evenly.
- Cook on low for 6–8 hours or on high for 4 hours. Alternatively, bake the chicken in the oven at 425°F (220°C) for 30 minutes, or until the juices run clear when pierced.
- Just before serving, steam the green beans until tender-crisp and cook either quinoa or brown rice according to package directions.
- Divide the chicken, green beans, and quinoa or rice evenly among plates and enjoy!
