There seems to be a lot of buzz about kale being a “super food” these days, so this week I decided to share a recipe – kale chips!  Kale is a leafy green vegetable packed with calcium and vitamins A, C and K.  Once cup of raw kale provides more vitamin C than an orange, two day’s worth of vitamin A and a week’s worth of vitamin K!  A serving (1 cup) of cooked kale provides almost 20% of your calcium requirements for a day, about the same amount in 6oz of milk.  You can use it as a substitute for lettuce in a salad, saute it with olive oil, garlic and onions, or bake it to make kale chips (my favourite!).  Kale chips is a great way to satisfy salty cravings.
