This recipe is super easy to make and always a crowd pleaser! Adding a dollop of jam is my favourite variation (see notes below).

Ingredients:

-    100 gram bar of 70% dark chocolate
-    1 tbsp coconut oil
-    1/4 cup natural peanut butter
-    Chopped nuts, such as pistachios or almonds (for topping)

Directions:

- Set 12 mini paper baking cups on a baking sheet.
- Melt the 100 gram bar of dark chocolate with 1 tablespoon of coconut oil.
- Spoon 1 teaspoon of melted chocolate into each cup, spreading the sides slightly up each baking cup.
- Place in freezer for 10-15 minutes, until chocolate has hardened.
- Remove from freezer and top each cup with 1 heaping teaspoon of peanut butter and an additional teaspoon of melted chocolate.
- Sprinkle with chopped nuts and place back in the freezer until ready to eat.

Recipe variations:

-     substitute cashew or almond butter for peanut butter
-     add a dollop of jam on top of peanut butter layer
-     add some flaky sea salt to the top of the finished cups
